The Wild Card Project: James Hayes
James Hayes’ third instalment for Wild Card has been carved from the Suit of Wands, a series of tarot cards which rules creativity, progress and discovery, qualities which inform every step of our brewing process. With this theme in mind, our latest collection is both faithful and experimental, comprising a decadently flavoured Coffee Oat Milk Stout, an IPA, a Pale Ale, and for the first time in Wild Card history, a TIPA! We brewed a recipe which is luxuriously thick and hazy, with bold tropical flavours.
See No Evil, 4.2% | Pillowy soft pale ale, made with lager, carapils & pale malt. Dry hopped with Cryo Citra, Cryo Mosaic and experimental US hop HBC 630.
Wilful Ignorance Stout, 5% | Luscious coffee oatmeal stout made with pale, chocolate malt, roasted barley, light crystal malt & oats. Hopped on the hot-side with Citra leaf and generous amounts of oat milk. Finished with cold brew coffee & a delicate lactose addition.
Lovers In Arms IPA, 5.5% | IPA brewed with an oat base & fermented with our in house yeast blend. Dry hopped generously with Cryo Talus and Citra T90.
Nothing Can Stop Me TIPA, 10.3% | Luxurious Triple IPA made with carapils, lager, oats & wheat malt. Fermented hot with Kveik yeast and dry hopped with cryo citra and enigma hops. Decadent.
